Roman is two!!!

We were so fortunate to get to spend Roman's birthday with both his grandparents and his cousins! My mom, Matt's parents, Matt's brother Mark, and the triplets all came in town for Roman's birthday! He had a blast!!

Friday night, we all went out to Fishmonger's for dinner. It was a Plano East reunion for Matt and Mark. Roman had so much fun with his cousins! They stayed up a little late due to a late dinner and then bath time all together. But it was all worth it!
Saturday morning on Roman's birthday, we all went in and woke up the birthday boy! He was still deep asleep at 9am due to the late night before!! Here's a picture before we went in...

I fixed everyone homemade pancakes and bacon for breakfast. Roman got two miniature little "2" pancakes!

Time with Daddy

I'm not going to lie. Matt has been gone SO much lately because of Delta training. We know this schedule is only temporary, but it has been really hard. We miss daddy when he's gone! Roman has to have dadda bathe him and put him to bed when he's in town. He's all about daddy time. I completely understand.

A couple of weeks ago, we made the mistake of Matt saying bye to Roman when he left in the middle of the day. It was horrible! Roman threw himself on the floor screaming for his daddy. I was crying and Matt even teared up. We will never do that again! The next week, we had Matt leave during Roman's nap time so it wasn't a long drawn out goodbye.

Luckily I have great friends that come over and keep me company when we're lonely! Helen brought Jake over one Friday night for play time and pizza. It was exactly what Roman and mommy needed!

Yummy food!

Last week one day I got to work from home while Matt was in town so I made the family homemade pancakes with a homemade blueberry syrup. It was absolutely fabulous!! Roman loved the syrup!
Blueberry sauce
1/2 c sugar
2 T. Cornstarch
1/2 c water
2 c blueberries, fresh or frozen
1 T Lemon juice
Combine sugar & cornstarch, Add water, lemon juice & blueberries
Cook over med. heat in a sauce pan.
Heat until thick. It will turn clear or glazed looking when done.
Add more cornstarch if want it thicker. Add less if want it thinner.


Last night I didn't know what to create for dinner, so I threw some crazy homemade quesadillas together. Roman actually loved them!

I first sauteed some chopped kale with diced onions, garlic, and cherry tomatoes. Then I added a few eggs to make a little scrambler. On a separate skillet, I warmed up tortillas and placed the egg mixture and a bunch of shredded cheddar cheese together. The final product: homemade kale/egg quesadillas! They were so yummy with a side of sliced avocado pieces and a dab of salsa! I loved knowing that my toddler was eating kale!!

This week I am 24 weeks pregnant with baby sister and big brother Roman is turning 24 months old! Oh, and we love watching the tv show 24! More on Roman to come...

I'm feeling great and getting bigger by the day!
Pregnancy Facts to date:
  • I still crave sweets and can't get enough citrus products. I love orange juice!!
  • I'm not feeling sick at all. 2nd trimester is the best!
  • I still get leg cramps at night like I did with Roman, so I've been taking magnesium supplements before bed and it really helps!
  • I've only gained 7lbs so far, which is way less than I was with Roman at this time. I think it's because I'm chasing a toddler around and no time to nap with this pregnancy. Also, Matt and I eat a lot more healthier now than we did two years ago. I know the added lbs are going to come very soon anyways, so I'm not worried!
  • I really don't have any food aversions anymore. Anything works these days!
  • Baby sister kicks and moves a lot, but not as much as Roman did
  • People say that you don't go all out with the nursery on your second child. I thought this would be my philosophy also, but having a girl has changed everything! I ordered the bedding that cost 3 times more than Roman's and I'm in the process of ordering curtains, lighting, etc. Can't wait to take pictures of the final project!!!
  • We feel blessed and so excited to meet our sweet little nameless daughter in less than 4 months!!

Post Surgery Update

I just took Roman to the ENT this morning for a post surgery follow up appointment. Doctor says that his hearing has improved by 400%!!!! His ears look wonderful! I've never heard this before!! Friends have noticed that Roman's speech is starting to get more clear and he is definitely using more sentences. Even though we are in the terrible two's stage, I can still see how much happier Roman has been. He's no longer in pain! I am so thrilled to see my little boy feeling so much better! Praise GOD!!!!

surgery

My poor little boy had to get his second round of ear tubes and adenoids taken out last Thursday, February 17th. The hardest part of the whole event was that Matt couldn't be there. He's still in Delta training and was scheduled to be in Atlanta during this past weekend. We were going to wait until this week to do Roman's surgery but were strongly encouraged to go ahead and get it done because apparently our little boy is in continual pain from "glue ear" and has some temporary hearing loss. Argh! It just makes me so sad that he was in so much pain.

After surgery they told me that Roman's left ear was really bad and would have burst if we would have left it one more week. His little adenoid was super swollen and definitely needed to come out too!

Surgery was at 7:30 am so we had to be there at 6:30. It was best to get it over with early in the morning since he couldn't' eat or drink anything beforehand.

After we got home, Roman kept throwing up from the anesthesia and was really out of it. They even gave him morphine in the IV! Luckily my friend, Jessica, from church happen to come over and saved me! She brought me lunch and even ran to get a prescription for Roman's nausea. I was so grateful! Even if I did eat my lunch standing with him crying in my arms. It was crazy!
We spent most of Thursday afternoon watching sesame street and cuddling.
Roman started doing much better on Friday. He still wakes up in pain from laying on his ears I think, but he's doing great considering. I have really felt the prayers surrounding us this past weekend while it's just been Roman and I. We really appreciate the support of our friends and family!
